Ingredients:
  • 1 whole chicken
  • 2 cloves of ginger
  • Spices: Salt, fish sauce, sugar, garlic, soy sauce, red vinegar.

  • Spring onion, Vietnamese mint, basil, coriander, purple onion
  • Roasted peanut.
Process:

Step 1: Clean ginger, purple onion. Then grill until they are fragrant. Clean spring onion + Vietnamese mint + basil + coriander, and slice small.

Step 2: Clean carefully chicken in water added a little salt. Then, put it into pot, add ginger + purple onion (in step 1) + 1 tablespoon salt and boil. Sometime, you should scoop away dirty bubble on the face of broth to make the broth more clear.

Step 3: Peel off the cover of garlic, smash and fry with oil until it is fragrant. Turn off the heat.

Step 4: Soak Pho Noodle into hot water about 5 – 10 minutes. Then, wash in cold water. Next, pour into clean basket and add more fried garlic (in step 3) + ½ tablespoon oil on Pho noodle mix well.

Step 5: Peel off the cover of roasted peanut. Then, crush it.

Mix 2 tablespoons soy sauce + 2 tablespoons sugar + 2 teaspoons red vinegar + 2 teaspoons fried garlic + 1 teaspoon salt together, stir well. Next, fix to suit your flavor.

Step 7: After boil chicken, soak into cold water about 3 minutes to keep chicken’s skin crispy longer. Next, chop chicken into medium pieces. Or you can tear into small pieces if you have kids.

Step 8: The broth of chicken, season to suit your flavor. Then, scoop into bowl, add more sliced coriander.

Before using, put pho noodle into bowl, add chopped chicken meat + roasted peanut + sliced spring onion + coriander and pour a little fried garlic with oil into bowl.
